What happens to a team's data when its subscription ends?
Use Case #1: Active teams change each season, but at least one active subscription exists every season?

Yes, all data for non-subscribed teams is still readable.
When a team is subscribed, it can edit/add to notebook data - those are the only features that should be locked down if not subscribed. I may lock down additional features like configuration changes, notebook print options (when available), etc. But the data will still be available.
So, Case #1 Q1 & C#2 Q1 are both yes. The difference you have made between those two (that an account has a subscribed team versus an account not having a subscribed team) has no bearing on the system. All subscription logic is team based, the system does not look at accounts.
In Case #1 Q2 - Team A is subscribed, so not only can the 2018 data be read, but it CAN be altered with a user having the correct permission. The correct procedure is to close the season to prevent this from happening. Only an Owner or Coach has the ability to re-open the season.
